Happy new week, everyone! In the past weeks, we have tried to reduce our daily sugar amount with a mixture of results: great skin and better sleep quality? Check! Feeling slightly depressed? Check as well.
So this week, we are starting with a healthy but nice cakey recipe. So enjoy it and make sure to try our variations below.
Mini Blueberry muffin baked oats recipe (serves 6)
Ingredients:
60g porridge oats/the equivalent of two mini bags (blended)
4 tbsp any plain yoghurt + 1 tbsp extra to ser
2 egg
1 tsp sugar
3 tbsp blueberries
1 tsp vanilla extract
Half a glass of oat milk
Method:
Blend the oats for a few seconds
In a bowl, mix the blended oats, the eggs, the sugar and the vanilla extra. Add the milk.
Stir in the blueberries
Bake for 30 minutes in the oven at 180C
*Add an extra tbsp of sugar for a sweeter flavour or add half a banana to the mix.
